Impress your guests with these beautiful Chiquita plantain and prawn canapés, which are quick and easy to make.

You will also need:
8-10 cocktail sticks

Preheat the oven to 170ºC / 338ºF /gas 5. Line a baking tray with baking parchment and set aside.

Cut the skin off of the Chiquita plantains. Carefully cut the Chiquita plantains lengthways into 0.5 cm slices. Bend them round so that the top and bottom are connected, creating a circle, and secure with a cocktail stick. Place onto a baking tray, and use a pastry brush to oil the plantain. Bake for 15 minutes. Remove and allow to cool.

Place onto a serving plate, and fill the rings with the hot, cooked basmati rice. Top with a cooked prawn, and sprinkle with the chopped chives.

TIP: Squeeze over some sriracha for a spicy kick!
