These parcels, stuffed with a prawn and peanut mixture, make a great starter or addition to any summer picnic. Serve them with pickled red onion and yoghurt for extra sharpness.

Preheat the oven to 180ºC / 350ºF/ gas 4. Line a baking sheet with parchment.

Cut the Chiquita plantains in half and chop the green skin off 3 of the halves. Wrap the leftover half in clingfilm and place in the fridge until needed to reducing browning.
Bring a pan of water to the boil. Place the remaining Chiquita plantains in the boiling water and cook for 30 minutes. Allow to cool in the water slightly before removing to a food processor. Blend with the egg, cayenne, flour and salt. You may need to add a tablespoon or so of the cooking water to help it blend.

Once a dough has formed, transfer it into a bowl and peel the remaining half of green Chiquita plantain, then grate it into the bowl. Using your hands, mix and gently “knead” the dough for a minute or so.

Roll the dough into 6 walnut-sized balls, and place each one in between two 15cmx15xm squares of baking parchment. Roll them out into 10xm circles, and, leaving the protective layer of parchment on, stack and place into the fridge while you prepare the filling.

Place the prawns and peanuts into a small blender and blitz for 1-2 minutes, until paste like. Tip into a bowl and add the salt and chives, stirring to make sure the herbs are evenly distributed.

To assemble the parcels, roll the prawn mixture into log shapes, around 3 cm long. Peel back the top layer of baking parchment on the chilled dough and wrap the dough around the prawn log, using the corners of the parchment square to help you. Press down to seal.

Brush a large saucepan with 1 tbsp oil and place over a medium heat. Gently fry the parcels for 2 minutes per side to get a crisp crust, then place onto the lined baking sheet and bake for 10 minutes, until cooked through.

TIP: You can make the parcels the day before, then bake them off just before you need them.

I bought a green Chiquita Cooking Banana, was not called a Plantain, at Publix and I can't find any recipe that calls for this banana. Can I use it in a recipe that calls for a Plantain?
